Recipe 1 – Hemp Milk
Raw, Vegan, Gluten Free and Sugar Free
lOOg organic hempseed or organic hulled hemp seeds
25g organic almonds
1-2 tsp cinnamon (optional)
1 drop organic vanilla extract
Soak ingredients in 1/2 pint water for 24 hours. No need to heat. Blend all ingredients thoroughly using a food blender. Add further 1/2 pint water. Add optional cinnamon powder (up to 2 tsp) and vanilla (maximum 1 drop if pure). Filter through a cloth. Chill for at least one hour. Keeps for 2-3 days.
Variations:
1-2 fresh figs
1/2 tsp freshly ground cardamom
1 banana or other fresh fruit
1 tbsp carob/cocoa powder
1/2 cup carrot juice to 1/2 cup hemp milk (from hempseeds)
Raw honey or maple syrup and nutmeg
Hazelnut or walnut also make great tasting milks.
Also try toasting seeds first for that roasted flavour
N.B. do not try all above together!
Try adding live yoghurt
Rose water or apple concentrate instead of water produce interesting variations.
The residue can be used as a substitute for hemp flour in most of the recipes in this book, as it is high in fibre and still contains useful EFAs and protein.
280g stone-ground whole-wheat flour
110g hemp flour, freshly ground
2 eggs
190ml water
1 tsp salt
1 tbsp hemp oil
In a mixing bowl, add egg, salt and oil to the flour. Knead to make a dough that doesn't stick to your hands (add more flour or water as necessary). Leave to sit for 30 minutes. Cut a palm size piece of dough, roll out and dust with flour. Knead by hand for at least five more minutes. Alternatively, run the dough through at the thickest setting of your pasta machine. Fold and dust the dough and run through again before repeating using medium setting. If working by hand roll the smooth elastic dough out to 50cm by 40cm, 2mm thick on a floured surface. With the machine use thinnest setting to repeat and pull the pasta away from the end, this time without folding.
You now have the basic pasta sheet which can be cut into various shapes, cooked and served with a tomato, fresh basil pesto, garlic, oregano and olive oil sauce (see sauce section) or fungi royale. To make tagliatelle, cut into 5mm strips.
Recipe 3 – Hemp Magic Smoothie
Raw, Vegan, Gluten Free, Sugar Free, Nut Free
50g de-hulled hempseeds
50g soaked and pitted dates
1 banana
1 cup rejuvelac
Blend all except hemp, strain and serve mixed with the hemp seeds.
Recipe 4 – Starch Free Hemp Crackers
Vegan, Gluten Free, Nut Free, Sugar Free, (raw)
Makes 12
150g hemp seeds, ground into flour
25g hulled hempseeds
25g sunflower seeds, ground
25g sesame seeds
1 tsp baking powder
1 tsp wheatgerm
25g hemp butter (ghee) or non-hydrogenated margarine
2 tbsp hemp, soya or pea milk, use more if needed
Options for toppings include ground hemp, sunflower, sesame, almond or 2 tbsp finely grated coconut
An optional extra for savoury crackers is 1 tbsp Hempso ™ sauce Set oven to 190°C. Rub in the butter/ margarine, seeds, baking powder and any extras in a bowl to form fine crumbs. Add milk and use your hands to make a firm dough. Cover a surface with some flour and ground seeds of your choice or the coconut. Roll 5-10 mm thick squares from the dough. Top the mix with more ground seeds and, carefully, using two sharp knives, move to your greased baking paper (coated in coconut gratings or preferred topping). Bake for 10 minutes or until starting to brown. Allow to cool and harden before placing on a wire rack to complete the process.
Instead of baking, the raw option is to leave on a wire rack in the sun to dry out for a day.
Recipe 5 – Garlic Ginger Hemp Dressing
Raw, Vegan, Gluten Free, Nut Free, Sugar Free
150ml hempseed oil
2 tbsp lemon juice
1 tbsp Tamari (hemp tamari if available)
1 tbsp tahini
1 tsp ginger, freshly grated
1 clove garlic, grated or minced
Combine all in a blender. Use for any salad or vegetable dishes.
Recipe 6 – Coriander Hemp Chutney
Raw, Vegan, Gluten Free, Nut Free, Sugar Free
1 bunch fresh coriander leaves (cilantro)
75ml fresh lemon juice
75ml water
75ml grated coconut
2 tbsp fresh ginger, chopped
1 tsp hemp oil
1 tsp raw honey or maple syrup
1 tsp salt
1/4 tsp fresh ground black pepper
Blend lemon juice, water and coriander until the coriander is chopped. Add remaining ingredients and blend into a paste. Will keep for one week if covered and refrigerated. Serve with dosas or salad
Recipe 7 – Raw Thai Hemp Curry
Raw, Vegan, Gluten Free, Nut Free, Sugar Free
One of my favourite recipes – and alive too!
Curry
1/4 cup red pepper or mild chilli, diced
1/2 cup cauliflower, grated
1 tbsp Sweet potato, diced
1 cup kale or other greens, chopped
1 carrot, grated
1 tbsp Currants, soaked
Sauce
1/4 coconut, juiced (use 2 tbsp Water in your juicer to produce this coconut milk) or
4 tbsp Dried coconut
1/4 cup hemp milk
1 tsp lemon grass
1 tsp cumin
1 small chilli, chopped finely or to taste
1 bunch fresh coriander or to taste
Mix all curry ingredients in a large serving bowl. Add other fresh ingredients to taste.
Blend all sauce ingredients in a blender and pour over curry. Serve with fresh coriander
Recipe 8 – Tofu Hemp ‘Cheesecake’
Vegan and Nut Free
Base:
350g digestive biscuits, low-fat vegan
100g Hemp Flour or Protein or Ground Hempseeds
75g organic hemp butter or non-hydrogenated margarine
Blend well in food processor, pat into tin, put into fridge.
500g tofu organic
3 tbsp golden syrup
75g raw cane sugar, light
Juice 1 lemon
Pinch salt
2 tsp vanilla essence
1/2 tsp cinnamon (none if using raspberries)
2 large bananas or 200-300g raspberries
Whisk all ingredients until they form smooth thick liquid, pour into tin and place in oven, 180°C, for 35-40 minutes. Texture should be of a mousse (not too runny, not too firm). Cover with a sprinkle of de-hulled hemp seeds and leave to cool in a fridge before serving.
