Crepes with Berries & Yoghurt image

Crepes with Berries & Yoghurt

Servings: 2 (VEG SF) Prep Time: 2 mins Cook Time: 15 mins


3/4 cup Certified Organic Plain Flour
2 tbs Certified Organic Hemp Flour
1/2 cup milk of your choice
2 eggs, or two flax/chia eggs
1/2 lemon
1 tbs maple syrup
  coconut oil
1/2 cup strawberries, chopped
1/2 cup blueberries
1 tbs dark chocolate, shaved
1 tbs yogurt of your choice
1 tbs Certified Organic hulled hemp seeds


Pour the berries into a saucepan, squeeze in the lemon and add the maple syrup. Bring to the boil then turn down and simmer until berries are soft. Mix the flour, hemp flour, milk and egg together until smooth. Heat a frying pan with a little oil then add 1/4 cup of the batter. Swirl the pan around until you have an even layer then cook for just over a minute on each side. Do the same with the rest of the batter. Top the crepes with the berries, yogurt, chocolate and hemp seeds.
