Hemp Protein Pancakes
Sweet or savoury - which would you choose? Honestly, it was a hard decision for me as they were both so delicious, and let’s be honest I obviously ate them both haha.
But, we love the versatility of these protein pancakes, due to the Hemp Gold protein powder, which has such simple amazing ingredients (literally just hemp!), and there are no artificial sweeteners in it so you can turn them into sweet to savoury pancakes - choose your own adventure!
Combine the milk and vinegar in a large mixing bowl. Leave to stand for 5 minutes.
Next, add in all the rest of the ingredients and whisk until smooth.
Heat a non-stick pan over medium heat with a drizzle of oil.
Add in 1/4 cup of pancake batter at a time. When it starts to bubble, and you can see the edges harden flip and cook the other side for a couple of minutes. Repeat with the rest of the batter.
For the sweet pancakes, I added some coconut yoghurt, mango, passionfruit, maple and hemp seeds.
For the savoury, I added cashew cheese then sautéed some mushrooms and spinach, avocado, salt, pepper and hemp seeds.
