Smashed curried avocado with hemp seeds. By Simon Toohey.
Ingredients:
Avocado
1 tsp Keens curry powder
1 tbls hemp seeds
Handful Rocket
1tbls Extra Virgin olive oil or Hemp Gold Oil.
Squeeze lemon
Salt & pepper to taste
2 slices sourdough
Method:
Remove the flesh from the avocado and mix in the curry powder and salt & pepper to taste – mash well.
Toast the bread, then spread on the curried avocado.
Place the rocket in another bowl, squeeze over the lemon and olive oil, and add a dash of salt and pepper.
Top the curried avocado toast with the rocket, and sprinkle with hemp seeds and season 1 more time.
