1 | ripe avocado, diced |
1 | large handful mint leaves |
1 | large handful coriander leaves |
1 | small red chilli, finely sliced |
2 tbs | hemp seeds |
1 | handful pistachios |
1/3 | cup buckwheat groats, soaked in water overnight |
1/4 | red onion, finely sliced |
2 | kale leaves, chopped finely |
1/2 | lemon |
drizzle of hemp oil | |
sea salt and black pepper to taste |
Throw all the salad ingredients in a bowl. Season generously with salt and pepper, drizzle with oil and squeeze in the lemon. Toss and serve.
